“We mostly followed Meredith Leigh’s recipe (photo below) but didn’t use any cure #1 (curing salt) cus we were feeling ballsy — turned out great!! This piece of belly was a little bigger than 5 lbs so it took 3+ weeks hanging in the garage till it lost the appropriate amount of water weight (30% ish) — we’ve been eating it freshly sliced and also frying it up like bacon! Delicious!
