How to cook mojo pork two ways

 
Oven Roasted Mojo Pork
Ingredients:
  • 1 Alluvial Farms Shoulder roast
  • 1 cup olive oil
  • 1 tbsp orange zest
  • 1 cup orange juice
  • 1/2 cup lime juice
  • 1 cup cilantro
  • ¼ cup fresh mint leaves
  • 1 medium head of garlic
  • 1 tbsp fresh oregano
  • 2 tsp ground cumin
  • Salt and pepper to taste

Equipement:

  • Food processor or blender
  • Freezer bag
  • Baking sheet with wire rack

Preparation Steps:

  • Place all ingredients in food processor or blender and blend smooth
    • If you don’t have either mix in bowl thoroughly with a whisk
  • Place in large freezer bag overnight in the fridge
    • Or at least a few hours
  • Put oven to 425
  • Place roast on wire rack on cooking dish and discard marinade
    • You do not want to place directly on cooking dish because it will burn
    • Season with salt and pepper
  • Roast for around 30 minutes or until it starts to color
  • Turn oven down to 375 and let finish cooking for around 1 to 1 ½ hours or until meat reaches around 160 degrees
  • Cover and let rest for at least 20 minutes
  • Cut and serve

       

Instant Pot Mojo Pork

Ingredients:

  • Alluvial Farms Shoulder roast
  • 1 tbsp of Alluvial Farms lard
  • 1 tbsp orange zest
  • 1 cup orange juice
  • 1/2 cup lime juice
  • 1 cup cilantro
  • ¼ cup fresh mint leaves
  • 1 medium head of garlic
  • 1 tbsp fresh oregano
  • 2 tsp ground cumin
  • Salt and pepper to taste

Equipement:

  • Food processor or blender
  • Instant Pot
  • Tongs

Preparation Steps:

  • Place all ingredients (except lard) in food processor or blender until smooth
  • Season pork with salt and pepper
  • Put Instant Pot on saute and place lard in bottom
  • Once lard is melted sear pork on both sided until golden brown
  • Remove pork and splash a little of the marinade on the bottom to remove the fond
  • Place pork and marinade into Instant Pot, seal it, program it to high pressure and cook for 35 minutes
  • Once done let it natural release for another 20 minutes
  • Remove pork and cut or shred (depending on how you want to serve it)
  • You can add a little bit of the cooking liquid back into meat if desired
