Two pound packages. In contrast to back fat, which is cut from between the skin and the muscle, leaf fat lines the belly cavity between the ribs and the viscera. Because it is not cut off the carcass, but rather separates on its own it tends to have fewer impurities, and is said to be prized by bakers when rendered. Can also be used interchangeably with back fat for home rendering or grinding into sausage with a leaner meat. Easy to render into lard in a slow cooker or on the stovetop.
